Vegan Curried Cauliflower Salad
If you’re not a fan of curry there is a good chance this little ditty will change your mind. Don’t be intimidated by the long ingredients list, it’s most likely things you already have. All you have to do is throw them together! Feel free to sub, add or omit. Don’t like peas? Leave them out. Bought too many grapes at Costco? Throw them in! This is one of my favorite guilt free, veg out in front of the TV meals. My Netflix & Chill (alone) meal, if you will.
Recipe
Ingredients:
1 bag of fresh cauliflower rice
½ cup fresh peas
½ celery stalk, finely diced
¼ cup diced red onion
1 ½ tablespoons vegan mayonnaise (Sir Kensington’s Fabanaise is my favorite brand)
1 teaspoon honey
½ teaspoon curry powder
¼ teaspoon turmeric powder
Pinch salt
Pinch of black pepper
1 tablespoon cilantro, chopped
Parsley for garnish
Instructions:
1. Place all ingredients into a large bowl.
2. Mix together until all ingredients are coated evenly.
3. Serve room temp or chilled.
