Cast Iron "Vegan" Focaccia Bread AND it's Gluten Free

I LOVE playing around with recipes, especially when they’re not the “usual” yummies. This focaccia took me a few times to create because I was using G/F flour and we all know for us non bakers, it isn’t easy. However, once I cracked the code this deliciousness was quickly a fan favorite at events.

Time 2 hour Serves 8

Ingredients

  • 1-2 Tablespoons Vegan Butter

  • 6 Tablespoons Olive Oil Extra Virgin, Divided for both the pan and bread 

  • 3 ⅓ cups @bobsredmill G/F All Purpose Flour

  • 1 Packet Instant Yeast 2 ¼ teaspoons

  • 1 ½ teaspoons Coconut Sugar

  • 1 teaspoon Salt

  • 1 ⅔ cups Warm Water 

  • Sea Salt

  • Fresh Rosemary

Instructions

1. Grease a cast iron pan with vegan butter. 

2. Drizzle 2 tablespoons of olive oil over the bottom of the greased dish. 

3. Add all purpose flour, instant yeast, sugar and salt to a mixing bowl and mix together in a bowl.

4. Add warm water and 2 tablespoons of olive oil and mix into a shaggy dough. 

5. Transfer the dough into cast iron pan. Just tip the dough out into the dish, DO NOT try and spread it! 

6. Cover the dough and let it rise for 1 hour. 

7. After 1 hour the dough will have risen and you can spread out in cast iron pan.

8. Preheat the oven to 425°F 

9. Dip your fingers in olive oil (to prevent them sticking) and then use your fingers to press holes all over the dough. 

10. Sprinkle fresh rosemary and sea salt on top of the dough and drizzle the remaining 2 tablespoons of olive oil over the top. 

11. Bake for 20 minutes until beautifully golden on top. 

12. Enjoy
