Ground Bison and Kale Keto Chili
Soooooooo. I don’t love keto but I respect my clients AND the work we do together. What that means is not everything is a one size fits all. So, we work together to figure out what works!!
Time 1 hour Serves 4
Ingredients
1 lb ground bison
1/2 tsp baking soda , (NOT BAKING POWDER!)
1/2 tsp gluten free soy sauce
1/2 tsp black pepper
1/2 cup white onion, finely chopped
28 oz fire roasted tomatoes
2 tbsp olive oil
3 cloves garlic , crushed
2 tbsp Ancho chili powder , regular Chili powder works as well
2 tbsp cumin 2 tsp oregano
1/4 tsp cayenne pepper
3/4 cup gluten free beef broth
Instructions
1. Start by seasoning the ground beef well with 1/2 tsp salt and 1/2 tsp black pepper.
2. Mix the baking soda with 1 tbsp water and mix into the crumbled ground beef and let it sit for 10mins
3. Add the chopped onions to a large pan or Dutch Oven and saute in a little oil for about 5 minutes until translucent, then remove the onions and set aside.
4. Brown the bison
5. Add the garlic, Ancho chili powder, cumin, oregano, and cayenne pepper
6. Return the onions to the pan with the meat
7. Add the beef broth and fire roasted tomatoes to the pan and stir well.
8. Simmer for 30-40 minutes.
