Easy Turkey Meatloaf
I know so many people don’t LOVE meatloaf like I do. However, this recipe is so special because when I was a kid my grandfather would make me meatloaf sandwiches. My Grandfather Atlas Blanchette and I would share recipes and stories as I was in culinary school. My Grandfather was so proud and encouraging of my culinary career and to this day I still cherish every conversation that led up to my graduation.
Time 1 hour Serves 4
Ingredients
¼ cup plus 2 tbsp ketchup (I use organic)
2 tsp Worcestershire sauce
½ small red onion (minced)
1 tsp olive oil
1.3 lb dark meat ground turkey
1/2 cup seasoned whole wheat or gluten-free breadcrumbs
⅓ cup green onions
1 large egg
1 Tbsp curly parsley
1 teaspoon salt (I use kosher)
Instructions
Preheat the oven to 350F.
In a small bowl combine 2 tbsp of the ketchup with Worcestershire sauce.
In a small skillet, heat olive oil and red onion on low heat until translucent, 3 to 5 minutes, remove from heat.
In a medium bowl combine the turkey, onion, breadcrumbs, egg, 1/4 cup ketchup, salt, both onions, and parsley in a bowl.
Place mixture into a loaf pan or shape into a loaf and place in a cast iron skillet. Spoon ketchup and Worcestershire sauce on top.
Bake uncovered for 50 minutes, remove from the oven and let it sit for 5 minutes before slicing.
